Something Special for Easter
We love all things chocolate (and cacao) at VanillaFood. There are always some gluten free (and vegan) sweets in the cabinet at both cafes.

As an Easter special we have shared the Chocolate, Hazelnut and Espresso Torte in cupcake form. This recipe is perfect for celebrations- birthdays, weddings, Christmas and of course Easter.
So here’s the recipe (also on page 194 + 195 of VanillaFood the Cookbook)
CHOCOLATE, HAZELNUT AND ESPRESSO MUFFINS
makes 10
INGREDIENTS:
160g butter, cubed
250g good quality dark chocolate buttons
300g coconut sugar
Pinch of sea salt
6 eggs, separated
190g hazelnut meal
Espresso Ganache:
200g good quality chocolate buttons
100ml milk
30ml espresso coffee
To serve:
Hazelnuts, fresh berries (and figs if in season), coconut ice-cream + your favourite chocolate eggs
INSTRUCTIONS:
1. Grease and line your muffin moulds with baking paper. Preheat oven to 160°C.
2. Melt the butter and chocolate in a bowl set over a pan of simmering water (don’t let the
bowl touch the water), stirring until melted and smooth. Cool slightly.
3. Using an electric beater, beat the egg whites until soft peaks form. Set aside.
4. Add the egg yolks, coconut sugar and salt to the chocolate mix.
5. Add the hazelnut meal to the mix and fold through the egg whites.
6. Pour the mixture into the prepared muffin moulds. Bake for 40 minutes or until the top
is firm to touch.
7. Transfer the cakes to a wire rack and cool completely before removing from the moulds.
8. For the espresso ganache, bring milk to the boil in a saucepan, remove from heat. Add the chocolate and espresso, stir until smooth.
9. Pour over cakes, smooth the top and press 1 chocolate egg on each and refrigerate until set.
10. Serve with berries, chopped hazelnuts and a scoop of coconut ice-cream.
